Puntarelle is unique among the chicories in that it is the young, hollow bolting shoots that are usually eaten rather than the leaves. They grow into dense beautiful "heads" (referred to as "pigne" or pinecones in Italy) with many points that, upon harvest, are separated, julienned into thin strips, and soaked in cold water to remove some of the bitterness while developing an elegant curl. In Roman markets, vendors can be found prepping the greens using a taglia puntarelle, a tool consisting of a fine wire grid (available here) which the stems are pushed through to finely slice them for soaking. The texture is crisp and crunchy with the lovely refreshing bitterness of its radicchio siblings. In Rome, Puntarelle alla Romana, thin strips of puntarelle in an anchovy, garlic, vinegar, and olive oil dressing, is a quintessential winter salad. There it is mainly a winter vegetable, but because bolting is triggered by photoperiod (day length, or more accurately night-length) it generally heads much earlier at our more northerly latitude, usually between mid-October and mid-November. 'Medusa' is actually variety from Puglia in the Italian south. While similar to the Roman types, Galatina types from Puglia tend to be a bit bigger, heavier, cold-hardy, and more uniform in their heading. The tradeoff is that the stems tend to be a bit shorter and the texture slightly less tender. We think both types very much have a place in any puntarelle enthusiasts rotation.
We have been growing this crop for many years here at Uprising, and in the past have found the available seed to be extremely variable, frustratingly producing a relatively low percentage of proper, harvestable plants. This Smarties strain has vastly raised the bar of success in our climate, with our trial plot showing very uniform heading and size. The timing of planting is very important - check our Radicchiology page linked below for more details on growing.

70-90 days from transplant

Packet: 100 seeds

Growing Info

Please visit our Radicchiology page for radicchio growing info!

*This seed is offered as part of the "Gusto Italiano Project", a collaborative partnership between Uprising Seeds, Italian breeders Smarties.Bio, and the Culinary Breeding Network. These are often referred to as "slots" with many types having early, mid, and late slotted varieties.

90 days from transplant

Packet: 100 seeds

[split]

Growing Info

Please visit our Radicchiology page for radicchio growing info!

*This seed is offered as part of the "Gusto Italiano Project", a collaborative partnership between Uprising Seeds, Italian breeders Smarties.Bio, and the Culinary Breeding Network. It is a product that is particular in that it does not have the typical taste or shape of other varieties of broccoli. The broccoli harvest happens between November and February, but according to tradition the most flavorful samples are those after the first frost, when, to defend themselves against the cold, the plants limit the amount of water held in their tissues, concentrating salts and sugars and making them more tasty. This variety of broccoli is rich in vitamins, mineral salts and calcium. The cultivation of this Fiolaro broccoli dates back to ancient Roman times. Cato the Elder spoke of it, recognizing its medicinal properties. Today, the typical production area is the hill of Creazzo, in the province of Vicenza in northeastern Italy. Fiolaro broccoli is at risk of disappearing because currently there are only two main producers. If you are not yet familiar with them, they tend to be saladette sized with firm thick flesh even when ripe. While they lack some of the depth of flavor of prime tomato season fruit, they bring bright acidity and fresh tomato presence to dishes long after it seems that season has past, providing a welcome diversification of tomato uses for the winter pantry. With that much time exposed to the elements and the variability of winter conditions they naturally rank higher on the risk/reward scale if left that late to harvest, but when the conditions align for a late season harvest they are a true joy of the winter table.

As with all radicchio, be especially mindful of your planting dates as a successful crop requires a MUCH narrower planting window than most garden vegetables.

120+ days from transplant

Packet: 100 seeds

[split]

Growing Info

Please visit our Radicchiology page for radicchio growing info!

*This seed is offered as part of the "Gusto Italiano Project", a collaborative partnership between Uprising Seeds, Italian breeders Smarties.Bio, and the Culinary Breeding Network. Somewhat of a compulsion, really. It might be my favorite thing to grow, full stop. We don't even sell it from our farm really, yet some years I pretend 1000 row ft is a perfectly reasonable amount to put in. You know, for um... personal use(?). And it's not like it's easy to grow, not like you can be flip about it. It's in the ground for 4 months. Then you have to dig them up from the cold wet late fall/early winter field, bring them inside, and grow them some more... in bins, or indoor shallow lagoons, in darkness for another couple of weeks. If you are a lover of plant form or just a lover of exquisite beauty, the result will take your breath away. I'll be honest, Rosa di Gorizia could taste like liver and onions and I would likely still do all that work to grow it. Its leaf margins tend to be lightly serrated and there is often a color contrast between the top and bottom of the leaf, which makes for a very elegant look. It is very uniform in shape and very cold hardy. While Isontina is a bit more delicate and variable in shape, sometimes more orchid than rose after forcing, 'Voglia' is very much rose. For most vegetables, in order to provide a continuous harvest over a long period of time, growers stagger planting dates throughout the season which in turn provides a continuous harvest as the plants mature to eating stage. With radicchio, a different strategy is employed. For the most part, the majority of heading radicchio is best suited to seeding around the summer solstice (transplanting in the second-third week of July). To achieve a longer harvest period, rather than staggering planting dates, breeders have developed different varieties within a type with different days-to-maturity harvests. These are often referred to as "slots" with many types having early, mid, and late slotted varieties.

60 days from transplant

Packet: 100 seeds

[split]

Growing Info

Please visit our Radicchiology page for radicchio growing info!

*This seed is offered as part of the "Gusto Italiano Project", a collaborative partnership between Uprising Seeds, Italian breeders Smarties.Bio, and the Culinary Breeding Network. Plants that produced a core of edible greens in the coldest months of the year when brought inside barns and cellars became food of necessity. Ironically many have now come to be thought of as gourmet culinary treasures like Belgian endive, Treviso Tardivo, and Rosa di Gorizia. The first Italian vegetable to gain IGP, a European-protected status for special food products specific to a place of origin (similar to many wines and cheeses) radicchio, Treviso tardivo was celebrated with a producers exhibition in 1900 which, interrupted only by wartime years, has been held every year since. While slightly smaller than the mid and late varieties, it has perfect shape and full density early in the season

The city of Treviso is one of the epicenters of radicchio production, and Rosso di Treviso Precoce is one of the best known types in Italy, second only to Rosso di Chioggia in terms of amount produced. "Precoce" means "early" in Italian and is used here to differentiate it from the late fall/winter forced-type, Treviso Tardivo. It is relatively unfussy to grow producing dense vertically elongated heads with wine-red leaves and wide contrasting white mid-ribs for fall harvests. It has the mildest bitterness of any of the red heading radicchio types, and though it is very much at home in a raw salad preparation, it is widely considered a type for sauteing, grilling, and roasting in Italy. Much of the plants sweetness that compliments the bitterness is found in the midrib. As with all radicchio, be especially mindful of your planting dates as a successful crop requires a MUCH narrower planting window than most garden vegetables.

About the named varieties... To achieve a longer harvest period, rather than staggering planting dates, breeders have developed different varieties within a type with different days-to-maturity harvests. For several years now, there has been an exchange happening between a group of PNW growers and chefs and a group of breeders and growers in northern Italy around a shared love of radicchio. After a couple of trips where delegations of American growers visited and toured farms in Italy, experiencing the place the crop occupies in the cultural and culinary fabric of its homeland, finally, in the fall of 2022, we had the opportunity to host several of our Italian friends for a tour of our farms here in the PNW to share how radicchio is taking root in our own communities. In Portland, OR the trip culminated in the third annual edition of the "Sagra del Radicchio" organized by Lane Selman of the Culinary Breeding Network, a joyful celebration of all things Radicchio, with tastings, farmer-chef collaborations, culinary workshops, and a growers symposium. Suffice it to say the Italians were amazed and moved to see such an outpouring of enthusiasm, so far from home, for a crop that means so much to them.

At the growers' symposium, our dear friend Andrea Ghedina, radicchio breeder and co-founder of Smarties.bio with whom we have collaborated for several years now, was fielding questions when someone asked him about the 'Pan di Zucchero' or Sugarloaf types. He got quite serious, gave them a hard stare, and replied "Let us be clear, Pan di Zucchero is just green leaves to fill the bags". Commercial salad bag filler. He might have even spat a little bit.

My first thought was, "Awkward...glad I am not behind the sugarloaf table at the event tomorrow". Sugarloaf was, ironically, many American growers' early introduction to growing radicchio as a crop in that it was one of the first radicchio types that had good quality seed available here (remember 'Borca'?), and its very minimal bitter flavor, balanced by natural sweetness, was more palatable to consumers than the Chioggia types (the other type primarily in the market back then) for people getting used to the idea of bitter greens.

Uniform green heads have a very upright habit, creating a densely wrapped column of crisp and only very mildly bitter leaves..."foglia crocconte". They're big! While they don't have the sex appeal of the bright colors and fantastical forms of other types, a sugarloaf head halved the long way, given light char on the grill and torn into a fattoush salad with a preserved lemon dressing is getting close to perfection as far as I am concerned. I mean, I am not one to argue with an Italian radicchio breeder about the merits of different types of radicchio (demonstrably not true), but I will say: later that day Andrea pulled me aside with a smile and said "actually I have a pan di zucchero I am producing seed of. They are extremely durable in the field and store well after harvest. I am especially fond, in our generally mildish winter climate, of the late maturing slots like 'Gaia' that continue to hold in the field and sweeten with the onset of cold winter weather. There is nothing quite so satisfying as going out to the field on a cold January day and scraping a layer of slimy decay from the outside of a head of Verona only to uncover an impossibly pure, glowing, immaculate burgundy head of radicchio to harvest for supper.

One of the older types, Rosso di Verona dates back to the 18th century when, like most radicchio of the time, it was produced by forcing. Through generations of selection it became the field heading variety we recognize today. Named after their center of production in the Veneto, Rosso di Verona are characterized by their small size (about the size of a large fist), compact egg-shaped heads, and prominent central midrib on the leaves. There is a lovely interplay between the bitterness of the leaf and the sweetness of the midrib, especially well into the fall and into periods of consistent frosts.

More a cooking than a salad radicchio, its manageable size is perfect for wedging and grilling, roasting or sauteeing.

85 days from transplant.

At this point, now that people have been growing it a bit, we can start to talk a little about nuance. In spite of its primary association with Roman culinary tradition are two primary centers of production in Italy, naturally one around Rome, but the other all the way down in Puglia. The other variety we sell, 'Medusa', is of the type that is grown in Puglia. The heads of these tend to be bigger and heavier, the heading more uniform, and the stems (the culinary part) shorter. As they stretch out the stems tend to need a trim from the bottom as the bases get a bit fibrous (much like the bottoms of asparagus spears). Somewhat unexpectedly, though these types come from the warmer south, they also tend to be more cold-hardy and can be harvested later into the fall.
'Gaetano' is our friends' at Smarties.bio first foray into a selection of the Roman type. While less uniform in heading, the longer slender stems are more delicate and tender and better suited to the traditional preparation of match-sticking and soaking in cold water to gain the distinctive curl for salad use. It comes on slightly earlier than Medusa and is not quite as winter hardy. We feel as though both types have their place in creating a complete program to maximize puntarelle enjoyment each fall.

(About Puntarelle in general: We are crazy about the chicories in general, but puntarelle has been a full-blown obsession here at Uprising. Traditionally grown in the region around Rome, puntarelle is unique among the chicories in that it is the young, hollow bolting shoots that are usually eaten rather than the leaves. They grow into dense beautiful "heads" (referred to as "pigne" or pinecones in Italy) with many points that, upon harvest, are separated, julienned into thin strips, and soaked in cold water to remove some of the bitterness while developing an elegant curl. In Roman markets, vendors can be found prepping the greens using a taglia puntarelle (or 'tapu'), a tool consisting of a fine wire grid (available here) which the stems are pushed through to finely slice them for soaking. We have been growing this crop for many years here at Uprising, and in the past have found the available seed to be extremely variable, frustratingly producing a relatively low percentage of proper, harvestable plants. These Smarties strains have vastly raised the bar of success in our climate. Distinctively elegant in appearance, “Incantatore" has long slender burgundy leaves with pure white mid-ribs that curl fancifully inwards at the tip. Produced primarily around the town of Treviso, in the Veneto region of northern Italy, this type of radicchio is known as Rosso di Treviso Tardivo and is traditionally “forced", or brought inside (roots and all) in late fall/early winter after growing for months in the field to produce a second, deliciously tender growth in the heart of the rosette. The practice originates from historically lean times when poor rural populations sought out sources of winter-time nourishment. Plants that produced a core of edible greens in the coldest months of the year when brought inside barns and cellars became food of necessity. Ironically, many have now come to be thought of as gourmet culinary treasures like Belgian endive, Treviso Tardivo, and Rosa di Gorizia. The first Italian vegetable to gain IGP, a European protected status for special food products specific to a place of origin (similar to many wines and cheeses) radicchio, Treviso tardivo was celebrated with a producer's exhibition in 1900 which, interrupted only by wartime years, has been held every year since. Use raw in salads, grilled, roasted, sautéed with risotto or pasta.
