Puntarelle is unique among the chicories in that it is the young, hollow bolting shoots that are usually eaten rather than the leaves. They grow into dense beautiful "heads" (referred to as "pigne" or pinecones in Italy) with many points that, upon harvest, are separated, julienned into thin strips, and soaked in cold water to remove some of the bitterness while developing an elegant curl. In Roman markets, vendors can be found prepping the greens using a taglia puntarelle, a tool consisting of a fine wire grid (available here) which the stems are pushed through to finely slice them for soaking. The texture is crisp and crunchy with the lovely refreshing bitterness of its radicchio siblings. In Rome, Puntarelle alla Romana, thin strips of puntarelle in an anchovy, garlic, vinegar, and olive oil dressing, is a quintessential winter salad. There it is mainly a winter vegetable, but because bolting is triggered by photoperiod (day length, or more accurately night-length) it generally heads much earlier at our more northerly latitude, usually between mid-October and mid-November. 'Medusa' is actually variety from Puglia in the Italian south. While similar to the Roman types, Galatina types from Puglia tend to be a bit bigger, heavier, cold-hardy, and more uniform in their heading. The tradeoff is that the stems tend to be a bit shorter and the texture slightly less tender. We think both types very much have a place in any puntarelle enthusiasts rotation.
We have been growing this crop for many years here at Uprising, and in the past have found the available seed to be extremely variable, frustratingly producing a relatively low percentage of proper, harvestable plants. This Smarties strain has vastly raised the bar of success in our climate, with our trial plot showing very uniform heading and size. The timing of planting is very important - check our Radicchiology page linked below for more details on growing.

70-90 days from transplant

Packet: 100 seeds

Growing Info

Please visit our Radicchiology page for radicchio growing info!

(Lycopersicon esculentum) With so many favorites already in our tomato collection, it takes something extraordinary for us to add new ones at this point, and we found that in Blush. A relatively new variety bred by Fred Hempel of Artisan Organics in Sunol, CA (with his then 8yo son in an advisory role), Blush set the bar high for beauty and flavor. The elongated (2.5”), cherry to saladette-sized fruits boast yellow skin with red marbling that gets more pronounced as the season goes on. Even with long hangtime, the thick flesh remains firm, giving a very satisfying toothsome and never mealy bite. The flavor is fabulously sweet, fruity, and complex. Many who have followed us over the years know that we are especially picky about plant architecture. Rosso di Chioggia looks like a miniature wine-red cabbage, dense and round. What perhaps best differentiates it from the other red heading types is that rather than having a thick central white midrib, its leaves have a radiating, dispersed, and much thinner rib that is more integrated into the texture of the leaf. Plants are unfussy and have been developed into a wide spectrum of very uniform days-to-maturity cycles or "slots". Chioggia can be more forgiving than some, but as with all radicchio, be especially mindful of your planting dates as a successful crop requires a MUCH narrower planting window than most garden vegetables.

Chioggia is a seaside town just to the south of Venice whose old town shares much of its more famous northern neighbor's setting of narrow streets and canals. The agricultural area radiates east, and while Rosso di Chioggia is grown all over he world, the IGP label is limited to producers in the the area between Chioggia and Rosolina. It is a shame that the type became the introduction for many Americans to the radicchio family through the ubiquitous baby salad mixes from California of the 90's and 2000's that invariably had shredded Chioggia leaves mixed in for color. Chioggia is often considered a type for cooking rather than eating raw in Italy on account of being further toward the bitter end of the radicchio spectrum than many of the fresh salad types, and consequently turned off many American palates through its assertiveness in raw form. It truly shines as grilled wedges with a fat like cheese or nuts and a sweet element like balsamic vinegar, pomegranate molasses, pears, or figs.

About the named varieties... For most vegetables, in order to provide a continuous harvest over a long period of time, growers stagger planting dates throughout the season which in turn provides a continuous harvest as the plants mature to eating stage. With radicchio, a different strategy is employed. For the most part, the majority of heading radicchio is best suited to seeding around the summer solstice (transplanting in the second-third week of July). To achieve a longer harvest period, rather than staggering planting dates, breeders have developed different varieties within a type with different days-to-maturity harvests. These are often referred to as "slots" with many types having early, mid, and late slotted varieties.

55-60 days from transplant

Packet: 100 seeds

[split]

Growing Info

Please visit our Radicchiology page for radicchio growing info!

(Cucurbita pepo) We first learned of this Ukrainian summer squash when our friend Mary, a farmer for the (now closed) acclaimed Willows Inn restaurant on nearby Lummi Island, asked us to help her find seed. The kitchen had grown fond of the variety for a dish they served, but the one commercial source in the US no longer carried it. Together, we tracked some seeds down and collaborated in hand-pollinating a crop to ensure an adequate supply for future seasons. Likely named after the city of Odesa (Одеса), a bustling port city on the Black Sea near the mouth of the Danube, it’s a “cousa” type, a summer squash typical to the Middle East with pale green speckled flesh and a bulbous blossom end. For the most part, the majority of heading radicchio is best suited to seeding around the summer solstice (transplanting in the second-third week of July). To achieve a longer harvest period, rather than staggering planting dates, breeders have developed different varieties within a type with different days-to-maturity harvests. Its sweetness also, similar to sugar loaf, makes it a great choice to halve and grill. "Palla di Neve" means snowball in Italian.
90 days from transplant.

Packet: 100 seeds

[split]

Growing Info

Please visit our Radicchiology page for radicchio growing info!

*This seed is offered as part of the "Gusto Italiano Project", a collaborative partnership between Uprising Seeds, Italian breeders Smarties.Bio, and the Culinary Breeding Network. (recipes to come)

Broccolo fiolaro is on the Slow Food Ark of Taste list which is a living catalog of delicious and distinctive foods facing extinction. From their site: "The name of Fiolaro broccoli derives from the presence of sprouts along the stem of the plant (known in local dialect as “fioi”) that end up in the pan, along with the youngest leaves. It is a product that is particular in that it does not have the typical taste or shape of other varieties of broccoli. The broccoli harvest happens between November and February, but according to tradition the most flavorful samples are those after the first frost, when, to defend themselves against the cold, the plants limit the amount of water held in their tissues, concentrating salts and sugars and making them more tasty. This variety of broccoli is rich in vitamins, mineral salts and calcium. The cultivation of this Fiolaro broccoli dates back to ancient Roman times. Cato the Elder spoke of it, recognizing its medicinal properties. Today, the typical production area is the hill of Creazzo, in the province of Vicenza in northeastern Italy. Fiolaro broccoli is at risk of disappearing because currently there are only two main producers. Moreover, the product is, for the most part, known only within its production area.”

Smarties.Bio's fiolaro is based on the old local ecotype, maintained on local farms for years.
