The pepper is the first and currently the only spice in France to carry the European Union’s “PDO” (protected designation of origin) label, which protects both its name and regulates its process of production. Come late summer in the region, long ristras of the 4-5” long, conical scarlet pepper are a common site drying on the stuccoed facades of the homes. Our “Basque” is a PNW selection of this variety. Excellently suited to cooler climate production, it has become a reliable staple of our pepper patch. Topping out at about 4000 Scoville units, it is mild to middling in spiciness, giving it versatility in the kitchen to add flavor without overwhelming heat. In the Basque region, it is often ground to a coarse powder and used as a finishing spice. 24-28" tall when staked.
80 days. I can’t tell you how many times over the years we have stood together over a pepper plant, muttering, “I don’t remember either...YOU try one”. In all honesty, as far as hot peppers go, it’s middling, with very sweet flesh and a touch of heat in the pith and seeds. Stunning long red fruits are wonderful when stuffed and are beautiful in ristras. After roasting, they make an incredibly flavorful base for our annual batch of hot sauce, spiced up with some jalapenos and Thai chilis. An excellent chili for cool climates, it is early and productive. First offered in 1935.
70-80 days. Originally disentangled from the hybrid frying pepper “La Paris” at the biodynamic Kimberton CSA in Kimberton, PA, it then gained a little bit of extra size and a hint of spice in the hands of Phillies Bridge Farm in Gardiner, NY, before being passed on to Hudson Valley Seed Library who have continued to refine and stabilize the best traits to create a marketable cultivar. From “La Paris” to Phillies Bridge, hence “Bridge to Paris." The result? Perhaps the most beautiful fryer we have seen: long, glossy, smooth, very sweet, bright red fruits to 8”s and with much thicker flesh than most fryers. They have performed very well in trials across the northern US and were a standout at the OSA sweet pepper trial in Chimacum, WA. Across the Balkans, fall is the time for making ajvar. This thick, deliciously rich, tangy, savory spread preserves the peak harvests of peppers and eggplants to be enjoyed throughout the year. The process can take a couple days and often happens in large volumes (one recipe I read started: “Take about 60lbs of ripe red peppers…”). One of the choice varieties of sweet peppers used is known as “Elephant’s Ear” (Slonovo uvo in Serbian) for its impressive appearance. These beauties are some of the biggest, most beautiful sweet peppers we’ve ever grown, 6” long by 4” wide, slightly flattened, and with a pointed tip. Fruits ripen from green to bright red with thick walls and a very sweet flavor. Very reasonable maturity for such a big sweet pepper.
90-100 days. Its flavor is terrific, with rich depth and the heat very much upfront rather than in a slow build. A classic sweet Italian frying pepper, long with medium-thick walls and outrageously delicious flavor, it has gained a following, and for good reason. We've always farmed in short season, northern climates, and Nardellos thrive in those conditions: plants are compact and bear early and heavily.

We have always loved colorful mixes for cheerful presentations both at market and on the plate, and who wouldn't want this classic in a new color? Anne has been growing it for years at Gales Meadow Farm in Oregon for years after discovering what must have been a chance outcrossing with a yellow pepper and then saving seeds. We are inspired by the forward thinking of growers like Anne who work with seeds and develop varieties such as this to better their fresh market production. She generously shared seeds with us a couple of years ago, and we have been enjoying growing it.

The variety still throws some off types but gets more uniform each generation. As of 2021, I'd estimate 80-85% of the plants showed the classic Nardello shape and bright yellow color at maturity. They mature about a week to ten days later than the red, and the off types tend to mature a little earlier than the correct ones (and all of 'em are delicious). Plants hang heavy with fruit. Red and Yellow Nardello, fried pepper sammies, are officially a thing in our home now. Thank you, Anne!
90 days. They trace back through Horace Pippin, one of the most influential American artists of the first half of the 20th century, a self-taught painter whose work spans subjects of war, racial segregation, landscape, and portraiture. Fortunately for us, his legacy is also a window into the culinary and agricultural tradition of the Black community of the Philadelphia and Baltimore area during that time period, as he was an avid seed collector. These along with several other varieties (some like the "Fish" pepper are now widely available) were discovered in the basement freezer of William Woys Weaver's grandfather after his death. Pippin had traded seeds with Weaver's grandfather in exchange for "bee sting therapy" for a war injury to his arm. William Woys Weaver, a well-known seedsman and food historian, grew out the seeds and made them, and importantly, their stories, available through his Roughwood Seed Collection, from which their popularity has spread. These seeds and their stories are an important living agricultural legacy.
100 days. Thin-walled peppers don't seem to be a particularly appreciated trait in the US, where the vast majority of peppers are eaten either in salads or as the pepper equivalent of carrot sticks, but we've grown quite fond of them and find them much more appropriate in a variety of culinary contexts.
Mehmet tells us this pepper is most commonly used as a breakfast pepper in Turkey and is sometimes even marketed as "kahvaltılik" (meaning "for breakfast") at grocers and farmers' markets. Breakfast is an important meal in Turkey and is heavily tilted toward the savory side of things: olives, cheese, eggs, sucuk (dried spicy beef sausages), tomatoes, cucumbers, and peppers, fresh bread or simit (a circular bread encrusted with sesame seeds), jams and savory spreads. In this context, the peppers are served green, whole, and raw.
Personally, we prefer ripe red peppers to green, and we loved them for seasoning rice, sliced for dipping, and even as small (two-bite) roasted/stuffed peppers. I suspect they'd be great pickled as well. They reminded us a bit of a red version of one of our favorite peppers, Petit Marseillais, and were far and away the most productive pepper in our field in 2022.
