If you are not yet familiar with them, they tend to be saladette sized with firm thick flesh even when ripe. Picked ripe (or just slightly under-ripe) by the truss during the usual tomato season of late summer to early fall they are often then hung up with twine in large clusters, or alternatively laid in single layers in wooden boxes with good ventilation where they can store for up to 6 months to be used through the fall and winter. While they lack some of the depth of flavor of prime tomato season fruit, they bring bright acidity and fresh tomato presence to dishes long after it seems that season has past, providing a welcome diversification of tomato uses for the winter pantry. Perhaps what we miss the most at the end of tomato season is a quick and easy Pico de Gallo and this variety stretches that season several more months in our kitchen.

Many of these pomodoro d'inverno have their roots in the Italian south (perhaps the best known being 'Piennolo' from the volcanic soils of Vesuvius). 'Annarita' comes to us from our Italian friend and breeder Andrea as part of our 'Gusto Italiano' collaboration with Smarties.bio and the Culinary Breeding Network. He was given the seed by Annarita, the tomato's namesake, whose father drove trains for a living and brought the seeds from Puglia 50 years ago when he moved north to Padova.

Annarita has been a consistent standout in dry farming trials in Oregon's Willamette Valley performed by our friends at the Dry Farming Institute. Amusingly, it is a very firm (borderline crunchy) tomato, giving the name an extra layer of appropriateness. Selected for many years by farmers of the area for qualities that allow it to store well into the winter months, it is one of the most durable tomatoes we have grown. The fruits are slow to mature on indeterminate vines and never quite look or feel ripe to the touch, shifting from yellow with green streaked shoulders to an orange/red blush (giallorosso means yellow-red in Italian). Traditionally stored in single layers in wooden crates or hung in clusters ("Nzerte") similar to Piennoli, they can last for months after harvest in the right conditions. The flavor is defined by classic, very high acidity, a firm and toothsome flesh, and a burst of juicy seed/gel center. The context makes sense when considering another food tradition of the region, Frise, a twice-baked circular bread that somewhat resembles a sort of bagel-cracker. Since ancient times, Frise were also designed for storage, with their crispy texture and a circular shape allowing them to be strung through the center hole in bunches, thus a 'traveler's bread' for workers and fishermen who were away from home for long stretches of time. Quickly rehydrated with a dip in water (often seawater) they made a substantial meal. When rubbed with a fresh tomato, the juice helps saturate and soften the bread while the firm flesh coats and seasons the top (this also works great with a grilled or toasted slice of crusty, rustic country bread).
In our home, we don't consider Crispiano much of a tomato for cooking in any way, preferring it chopped on grilled bread or in something like pico de gallo.
Given this modern world of food distribution and the availability of tomatoes in the markets year-round, Crispiano Giallorosso has very much fallen out of fashion and is no longer widely grown, though Slow Food has set up a presidium of a handful of growers to celebrate the variety and its tradition.
80 days. A "de colgar" or hanging tomato, its name translates to "bad face," likely on account of its peach skin that turns red as it matures, as though blushing. It has proven to be one of the most durable of the storage tomatoes we have grown to date, with the firm fruits lasting months after harvest. The matte skin is somewhat reminiscent of "peach" tomatoes and is strikingly beautiful in its unusual appearance, especially contrasting against its darker red interior. Like most storing tomatoes, the flavor hits peak well after harvest and shouldn't be compared to summer season varieties, as they are unique in their winter role both texturally and flavor-wise.
Indeterminate. 75-80 days.
